Happy-new-yearI still can believe how fast 2014 has flown by… damn and I’m almost another year older. I have got to slow down and smell the roses before my entire life flies by. I can remember being 15 and going fishing as if were last week.

Cumari Pepper Hot Sauce

Ingredients:

1 cup Cumari Peppers (they are a little bigger than a pea) 30 – 50k SHU
2 tablespoons apple cider vinegar
1 thin sliced fresh apple (sweet kind)
½ tsp Turmeric seasoning
3 tablespoon sugar
2 – 3 tablespoons honey
¼ cup onion
3 cloves garlic

Directions:

  1. Heat everything in a skillet for about 5 minutes or so.
  2. Blend everything up in a blender until smooth.

Use on eggs, fish, chicken, or pork.

This is one of my favorite sauces. It doesn’t stay around too long before everyone eats it up.

Trinidad Scorpion HOT Sauce

Ingredients:

3 Trinidad Scorpions, Chopped
1  15 oz can Peaches
¼ cup of honey or cane syrup
¼ cup of brown sugar
1/2 cup Raisins
1 cup Onion; minced
4 cl Garlic; minced
1/2 t Turmeric
1/4 cup vinegar

Directions:

Bring everything to a boil together in a pan; lower heat and simmer 5 min. puree in blender. It has a sweet but HOT flavor, good for most any meats, fish, eggs, etc.

I love this and the Butch T Hot Sauce. You can change out the fruit to apples, pineapple, Mangos, oranges, pears, etc. Try one batch with honey the other with cane syrup, slightly deferent flavors.

Peppers and More Peppers

I’m upto about 40 different kinds of peppers now. Why I’m unsure but I think it’s some type of addiction. I’ve not harvested the first pepper yet but I bet I’ve bought $150 worth of pepper seeds. Most of the are of the hotter types, Scorpions, Carolina Reaper, Habaneros (orange, red, yellow, white), Ghost Peppers, Scotch Bonnet, Devils Tongue, Birds eye, Thai, Vietnamese, Tepins, Santaka,  Jamaican Hots, Serrano, Hot Wax, Fatali, Cayenne, Tabasco, Yellow Scorpions, etc. I really do have over 40 types not counting the bell peppers. I guess I’m going to be a pepper growing fool this year so if anyone wants to bring the beer over and eat some peppers let me know…

That is some Trinidad Scorpions – HOTTEST IN THE WORLD! About 1,463,700 Scoville … which mean they will smoke your ass! Well the Carolina Reaper has tested at an AVERAGE Scoville Heat Units of 1,569,000 and had a High Testing of 2,200,000  Scoville Heat Units. (even hotter)

Internet is Being Blocked!

We locked down everyone’s internet at the office. No more screwing off on Facebook, porn sites, google+, etc. It’s not that anyone actually cared, it is just that it was being abused. I mean to check Facebook occasionally is one thing but to leave the screen open and up on your monitor is something else. So now everyone but a few of us are totally locked out of the internet, except for selected sites.

Everyone hates being an asshole but what else are you supposed to do? They know it’s looked down upon and they don’t care, they continue to do it, well not anymore. The gates have been shut. Not by solid doors but with port holes in them to see out of. Personal stuff stays at home and work at work. If we’d ask them to answer a question from home they’d have a heart attack.

Well for now that’s simply how it is. Maybe later on we can add some sites back in and maybe there won’t be the abuse of the privileges.

Cuban-Style Chicken

A nice Cuban girl gave me this recipe… it’s Awesome!

Cuban-Style Chicken:

What you need:

One package of drum sticks
One package of breasts
Complete seasoning
Cumin
Onion powder
Garlic powder
Mojo
Tin foil
Casserole dish
Line pan with tin foil to avoid a mess

Pre-heat overn to 350 degrees

Clean the chicken well, but do not remove skin

Marinate the chicken with complete seasoning, mojo, and cumin. Cover all of the chicken with the seasonings, but make sure to go easy on the cumin.

Let marinate for at least one hour (2 is even better)

When you place the chicken in the pan add some of the mojo from the marinade on to each piece of chicken.

Cover the chicken with foil, and let cook for 50 minutes. If the chicken still isn’t cooked after 50 minutes, set the oven to broil for 5-10 minutes

Cooking tips:

A 9×13 pan works well for this dish. Glass pans are preferable.
Remove immediately after it’s done to avoid chicken drying out.

 

I’m an Arborist

Ok… I started a new tree section on the website, “Arborist”. I decided to document and photograph all the trees that I’m planting and trying to raise. It will be a continuation of the tree growth so it’s not going to be extremely exciting or anything. But I will take photos of the seeds, where they came from, when I planted them, when they sprout, where I chose to plant them and then a yearly update of their progress.

You can only imagine how exciting it is to grow trees. You have to be extremely patient and be prepared for disappointment after watching a tree grow from seed and overnight freeze in a cold spell and there is nothing you can do.

I’m here is sunny Florida, so if anyone is out there who wants to send me a few seeds to grow and follow their progress let me know. If you’d like me to gather some home grown seeds and send them to you let me know. It’s amazing how you can take seeds from India and ship them to me and I’ll grow the seed here in the U.S. We used to have birds do the work for us, now we have the USPS to do it for them. Unfortunately some trees are so invasive that they kill out native trees, like Mimosa and Chinese Tallow (popcorn trees), and those damn ficus trees…KILL THEM ALL!

My Eye!

I awoke up today for the second day in a row where I could barely see anything.

meI guess I have an eye infection and it kept getting worse… quasi-motto!

 

Obsession with Trees

Yes I’ll admit I have an obsession with trees. But it’s cheap enough and so far I probably have only spent maybe $125 or so. I have all the seeds I want and really are buying them to bonsai.  I will make my money back from them, even if I have to sell some at the flea market or on the side of the road. If all goes well maybe even on ebay and craigslist. But my wife is right I need to slow down on the trees.

Right now it’s not really trees it’s seeds. I still have plenty of places to plant some and I want a variety. I realize by the time they are big enough to really be beautiful I’ll be headed toward the grave but what a nice legacy to leave my wife and kids. They’ll be able to look back and know I planted those and enjoy their beauty. Then again they may get out the chainsaw and cut every one of them down…argh…!

But I will stop buying seeds for the time being. I want some Golden Royal Poinciana seeds and maybe some Kentucky Coffee Tree seeds, then I’m done… yea right~
